I accidentally ordered 4 boxes of quinoa flakes from Vitacost while studying for my last big exam.
One can only eat so much quinoa flake for breakfast oatmeal-style, so the chance to make granola bars proved an ideal opportunity to use them. The result was better than I expected.
Here is the recipe:
Banana Raisin Soft Granola Bars
2 cups rolled oats
1 cup quinoa flakes
2 ripe bananas
1/2 cup whole almonds
1/2-3/4 cup raisins
1/2 tbs cinnamon
1/2 tsp ginger powder
1/2 tsp nutmeg
1/4 cup coconut butter (1/8 cup for mixture, 1/8 cup to butter the pan)
2 tbs honey
1 tbs maple syrup
1 tsp vanilla
1 tsp salt
optional: 1/4 cup almond butter (to drizzle on top)
Directions:
1. Preheat oven to 350 deg F.
2. Coat 8x8 pan with coconut butter.
3. Mix the rest of the ingredients together in a bowl.
4. Spoon mixture into pan.
5. Pat firm and dry with your hand.
6. Optional: drizzle almond butter on top.
7. Bake for 20-25 minutes or until edges start to turn golden brown.
8. Flip over onto cookie sheet and let cool.
9. Cut into granola bar slices, serve, or save in the fridge.
10. Enjoy!
